SPECIAL CHICKEN DUM BIRYANI RECIPE

- 1/2 tsp salt
- For the rice:
- A touch of saffron
- 1/2 cup milk
- 2 cups of water
- 5 cardamoms
- 3 cloves
- 1 stick cinnamon
- 2 mace
- 2 dark cardamom
- 5 dark peppercorn
- 1/2 tsp salt
- 1 cup rice (long-grain, washed basmati rice)
- For the wrapping up:
- 1 tbsp ghee
- 1 tbsp coriander leaves, hacked
- 2 tbsp seared onion
- 3 almonds, hacked
1. First, blend the saffron down the middle some milk and keep it aside.
2. Now in a bowl, including all the marination fixings, and coat the chicken pieces well with it. Let it marinate for around 4 hours.
3. Now to set up the rice, but all the fixings gave aside from saffron and milk, in warm water alongside washed rice.
4. Cook for 10-15 minutes.
5. Heat some ghee in a skillet and include all the marinated chicken followed by cooked rice in it. Top with saffron milk, coriander leaves, singed onion, and slashed almonds. Blend well.
6. Let it cook on a low warmth (on dum, in its own warmth) secured with foil for around 20-30 minutes (till the water vanishes and chicken and rice are completely cooked).
7. Open the dum when cooked, blend the rice well. You can sprinkle with some rose water and serve hot.
